Snow Storm Elixir

Is there a cure for the blues on yet another January day in April, when there is much to pack, an ever growing belly (accompanied by ever growing pains), and 3 fitful children who desperately need spring?

Yes. Lemon Curd.

Sweet. Sticky. Sublime.
Half licked off of fingers, half spread heavily on something equally as unhealthy (whats a few extra pounds when pounds are multiplying at the speed of light).

And so we carry on to see another day, just as cold, but slightly brightened by the citrus sting of our lovely yellow treat.

I love lemon curd. I especially love it on a flakey pie crust but I will eat it anyway I can get it.

My mother in law serves it over cream cheese with crackers. Good stuff!

Oh Martha...we definitely have to share notes! Anything lemon is right up my alley...never made lemon curd, though!

Martha- Dinner was awesome. Thank you so much for driving all the way up here- it really was very thoughtful of you.
Hopefully when your bundle of joy (right...) come we will be able to repay you.
Love you

i am obsessed with all things lemon lately...that is why i made lemon cream cheese cupcakes for my birthday...that lemon curd looks delicious, but maybe a little too complicated for me ( at least the recipes that i looked up online were).

thanks for the sweet note on my blog.

I love it! I can always count on you for cleverness. I used to crave lemons when I was pregnant. I would go to the store and buy lemons, cut them up and eat them. Just plain. It's gross I know. I also ate laundry soap.

What's with citrus and pregnancy? When I was pregnant with Brad, we lived in Arizona. Just down the alley behind our apartment was several orange and lemon trees. I would send Jim on nightly raids.

I would sit floor and devour 2 or 3 oranges at a time. It was October and the citrus was not quite ripe yet so it was a little sour. Wonderful!

I love lemon anytime. Lemon pie is my favorite!
